As a Certified Sommelier at the Court of Master Sommeliers, Mo has a thorough understanding of wine, wine making and wine pairing. Mo is our Head Sommelier and has a fundamental respect for tradition and the flavours that these traditions bring. At the same time, Mo’s youthfulness allows him to appreciate and understand the modern techniques, flavours, complexities and styles that the new wines present.

Bringing the flavours and techniques from the different locations Mo has worked and lived, we take a broad approach on the wine list.

Mo’s enthusiasm for new flavours allows him to form a strong connection with George. Together they present a wine pairing that is surprising, comforting, edgy and ultimately everything you hope for in a wine pairing.

Born in Algeria. Raised in Paris. Developed on all continents. Mo brings a large variety of flavours, attitudes, cultures, passions and appreciation for all that has to do with wine. Regardless of whether you call it Vin, Sake or Wine.

 

Wine list.

In the development of our wine list we look at different criteria to present our guests with an enticing, interesting, conscious and international wine list.

We look for wines that are of natural origin or produced following biodynamic principles. We look for outstanding wine makers. Over the course of the team’s career – and in this case especially Mo’s career – we’ve travelled and worked all over the world. From the US to Australia, from the UK to St. Barth’s, from Denmark to the UAE, from France to The Netherlands and based on the experience in these locations, we create our wine list.

Most of our wines come from Europe. And, although, we limit our carbon foot print, we do believe that some wine makers and thus wines, cannot be overlooked as we want to offer you a complete wine list representing our knowledge, flavour, perspective and image. Therefore, we have selected some extraordinary wines and wine makers to create an unforgettable wine experience at your table.

Guests are welcome to bring special bottles of wine that are not represented on our wine list.
