We are serious about buying local products only. When it is absolutely impossible to find products in the quality we look for, we source it outside Dutch borders. E.g. Wine, ginger, citrus, pepper and tea.

In buying local we reduce our footprint, support the local economy and educate our guests on the great products that can be found in the Randstad area and The Netherlands.

No bottled water from far

In our restaurant we serve filtered tap water in collaboration with KRNWTR+.

Rather than selling bottle per bottle, we offer unlimited water service for the whole dining experience at a set price.

Charity

Every month we will donate €0,50 per water service sold to a charity that we believe need it most at that time.

KRNWTR+

KRNWTR+ is a sustainable alternative to single-use plastic bottle waste. They create unique water taps for companies, hospitality services and schools, with the goal to eliminate waste and create a better future for our planet.

KRNWTR+ is a Amsterdam-based company that donates part of their revenue to charities focussing on reducing the plastic waste in the oceans.

Flowers, herbs & mushrooms

One of our partners in herbs and only partner in flowers and mushrooms: Casa Foresta.

For some people in The Netherlands a well-known company and business leader: Edwin Florés. The drive and passion that Edwin shows in curating, growing, harvesting and preserving his treasures is commendable. It is a true pleasure working with this walking wikipedia.

Our partner in herbs, flowers and vegetables is the Amsterdam-based farmer Michel Kegels and his company Groenhartig.

Nature inclusive

Everything starts with a healthy soil. Groenhartig exclusively works with natural soil amendments that stimulate a healthy soil microbiome. They feed the soil, the soil feeds the plants

By planting diverse flowering perennial plants they also take care of the above ground life that helps balance the local ecosystem.

At Groenhartig we grow a large diversity of salads, vegetables, herbs, edible flowers, microgreens and currants for those who love to work with local seasonal produce. From salad mixes to crosne. From the humble carrot, to the unknown and more extravagant tomatillo, crunchy Asian turnips, fragrant marigolds and wintery sunchoke. Groenhartis grows up to 90 different products during the growing season.

Beside taste and health, they put a lot of energy in promoting the biodiversity at their farm. With the help of flowering hedges and a range of perennial plants, Groenhartig tries to boost the local ecosystem and incorporate as many hunting insects and other helpers in to the garden. Not only do they contain pests, but in this way Groenhartig cares for a more balanced nutrient base for the product leaving the farm.

Meats

For our carefully curated meat selection we work together with the well-known farmer-family: Voortwis at the farm, Lindenhoff.

Lindenhoff also sells to consumers but they reserve some special fridges for the picky restaurateurs…

75 HECTARES OF GRASSLAND

The animals are deliberately not dehorned; after all, there is enough space. In the summer they graze outside as much as possible on the 75 hectares of herb-rich grassland in Baambrugge. From birth, the calves walk side by side with the mother in the stable or in the meadow. Since the calves roam freely, in addition to the milk, they also eat the feed that the adults receive, as it should be: a carefully composed biodiverse and natural diet.

FARMER DIRCO AND JOËLLE

Dirco and Joëlle te Voortwis live and work on the farm with their four children. Every day they take care of the cattle, pigs and sheep that roam around 75 hectares of grassland in picturesque Baambrugge with great love. The fact that the animals are given space to graze and walk, eat healthy food and grow naturally is reflected in the pure, tasty meat. For example, the two have developed the Baambrugs pig – a unique crossing of a number of breeds – themselves.

Ceramist

Juul Meerdink is an Amsterdam-based designer and potter.

Bespoke Plates

In collaboration with Amsterdam-based ceramist, Juul Meerdink, Vanderveen got their hands on some unique pieces. Juul developed a bespoke marbling for our new plates.

It’s the magic that happens when you give chance a chance.

From the leftovers from Juul’s atelier a marvelous marble surfaced and we are more than proud to serve our guests on some one-of-a-kind Juul originals!

Korenmolen de Zandhaas is one of the last traditional mills in the Netherlands producing the finest flour in the country.
